Title: 固相微萃取法在酒類中多酚酸化合物之應用研究

Abstract: 酒中含有許多有害人體健康的成分,不過其中多酚類化合物(polyphenolic) 卻具有抗氧化之作用,可防止人體中低密度脂蛋白(LDL) 之氧化,而減少心臟冠狀動脈的疾病。極性的多酚類化合物需經繁複的萃取步驟,並需衍生化後,始能以氣相層析儀偵測之。本計畫擬以纖維上衍生化-固相微萃取法(On-fiber-derivatization-SPME) 針對五倍子酸(gallicacid)、龍膽酸(gentistic acid)、香草酸(vanillic acid)、咖啡酸(caffeic acid)、阿魏酸(ferulic acid) 及薰草酸(p-coumaric acid) 等六種存在於酒類及水果中之天然抗氧化劑作萃取和衍生化。然後將所得之三甲基矽烷化衍生物經HP 6890 氣相層析儀及HP 5973 質譜偵檢器作成分鑑定分析。並擬以價格較低的bis(trimethylsilyl)acetamide (BSA) 替代bis(trimethylsilyl)trifluoro acetamide (BSTFA),以期能發展出一個簡短、有效且不需用任何有機溶劑的萃取檢測技術。;計畫編號:NSC94-2113-M164-001;研究期間:200508~200607
