Abstract:	本專題主要研究關於日本的屋台，加以延伸探討及研究。在日本的屋台中，可以發現有許多附有日本特色的屋台，跟台灣的攤販有些不同。日本的屋台分布在許多地區這些屋台特徵及歷史源由是如何形成，都值得令人去探討。透過日本屋台的研究，發現相對於台灣的夜市攤販的環境與衛生方面等相關周邊雜亂的問題，日本福岡市為了保護屋台附近居民權益而對於屋台的相關規則「福岡市屋台指導要綱」特別的嚴格，除了配合食品衛生法、消防法、道路法、道路交通法等法律規範，就連營業空間的限制、附屬設施、環境衛生及管理制度、營業時間等問題都設想的相當周全。
