Abstract: 本專題主要是探討不同發酵程度的茶葉,它咖啡因含量的差異,且同品種的茶葉也分成冷泡24小時跟煮沸30分鐘,來比較咖啡因含量的差異。實驗測試茶的種類有:老茶、紅茶、四季春、翠玉、金萱、烏龍。由實驗數據結果加熱30分鐘6種茶葉中含咖啡因之含量依序為老茶、紅茶、翠玉、四季春、金萱、烏龍;冷泡24小時咖啡因之含量依序為烏龍、紅茶、金萱、四季春、老茶、翠玉。從實驗結果得知,茶葉煮沸30分鐘比冷泡24小時的咖啡因含量還多。
